The Southern Railway Headquarters Hospital Kitchen caters to the therapeutic diet needs of the inpatients of the hospital. It is a centralized Kitchen where nutritious food is prepared and delivered to the patient’s bed side. The Kitchen was recently renovated and inaugurated on 29th January 2022 by the then General Manager of Southern Railway. It is licensed by the FSSAI. The layout of the kitchen was modified to suit the current needs. Specific areas were earmarked for the different production cycle activities like receiving, storage, pre-preparation, cooking, packing etc. A separate area was newly constructed to wash the pots and pans. This enabled the cooking area to be clean and dry.

Several new cooking equipment like double burner gas ranges, hot plate, wet grinders, electrical idly steamer, electrical vegetable cutter, electric coconut scraper, bain marie, dough kneader are in use. Two commercial refrigerators of 1000 L capacity, two solar water heaters of 500 LPD and electrical chimneys are also installed. Stainless steel food trolleys and tea trolleys are also available.

The Kitchen is headed by an ACHD and managed by two dieticians. The dieticians plan therapeutic menu according to patient needs and supervise the daily activities of the kitchen. Special enteral feeds are also prepared and served to sick patients. The kitchen functions in two shifts and is manned by 9 staff. Cleanliness of the kitchen and hygiene of the staff are given utmost importance. The staff undergo yearly medical examination stipulated for food handlers.

Around 150 diets are supplied daily. Coffee, Breakfast,Lunch,Tea and Dinner are served.

The dietitians also engage actively in nutrition education and patient outreach programs. They also create nutrition awareness among railway employees and railway school children.
